Cheddar Cookies with Chili flakes & Chives

During the busy holiday season, I like to baking my special cookies that only take a short amount of time to prepare. These cookies are best to serve as a snack – with tea or a hot soup. They are super crispy on the outside and fluffy inside. I love the cheesy flavor that provides warmth, particularly when celebrating at a festive time like Christmas. 🌲

Ingredients:

  • 3 cups all-purpose flour
  • 1 stick (115 grams) unsalted butter
  • 1 ½ cup butter milk
  • 2 cups cheddar cheese, shredded
  • 1 teaspoon chili flakes
  • 3 cloves garlic, crushed
  • 2 teaspoons dried chives (optional)
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1 egg
  • 1 teaspoon sea salt

Method:

Heat the oven at 400-degrees Fahrenheit. Line the baking dish with parchment paper, then spray oil.

In a large bowl, mix together sugar, flour, sea salt, garlic, chili flakes, chives and sea salt. Add butter and mix well until the butter is blended into the dough. Combine cheddar into the dough mixture.

In a separate bowl, whisk buttermilk and egg until they are well combined. Now make a well in the center of the prepared dough mixture. Slowly pour the buttermilk & egg mixture into it. Using a wooden spoon, mix well until the dough mixture comes together evenly.

Scoop the dough onto the baking sheet evenly.  Bake the cookies for 15-20 minutes until they turn light brown. Serve at room temperature.
