Cooking every day can be quite taxing. I am glad that I created this recipe that requires a relatively short amount of time to prepare and is so delectable. Here is the recipe for everyone to enjoy.
Ingredients:
- 8-10 jumbo size shrimps, peeled and deveined
- 2 tablespoon all-purpose flour
- 2 teaspoons turmeric powder
- 1 teaspoon black pepper, crushed
- 1 teaspoon cumin powder
- 2-3 cloves garlic, crushed
- ½ cup unsalted cashew nuts
- 1 red onion, medium size, cut into cubes
- 1 green or red bell pepper, cut into cubes
- 1 tablespoon honey or agave
- 1 teaspoon rice vinegar
- 3-4 fresh red Thai chili, sliced
- 1 tablespoon peanut oil
- Sea salt as needed
Method:
In a small bowl, mix together agave, rice vinegar, black pepper and salt, along with 1 tablespoon of water. Set aside.
In a separate bowl, mix together flour, cumin powder, turmeric and salt. Coat the shrimps with the mixture.
Heat oil in a large skillet over medium heat. Stir-fry cashew nuts, bell pepper, onion, and Thai red chilies for 1-2 minutes. Set aside.
Using the same skillet, heat oil over medium heat. Fry shrimps for 1-2 minutes all over until they turn pink and are cooked. Add the prepared vegetables and agave mixture. Toss them together for 1-2 minutes until all the flavor are infused. Serve hot.
