Oat Milk Pudding with Mixed Berries

Making the right eating choices is naturally good for our health. Our positive eating choices become strongly ingrained habits if we take ownership and are mindful of them. Likewise, we need to closely monitor the ingredients we use and their nutritional impact. With this in mind, I created my oat milk pudding with mixed berries recipe. This pudding has a creamy texture and tastes so good.

Oat milk is part of a popular food trend because of its many health benefits. It is a non-dairy, lactose-free, and vegan-friendly alternative to cow’s milk. This pudding is the ultimate comfort food – especially in winter when we crave a dessert.

Ingredients:

  • 2 cups of oat milk
  • ¾ cup brown sugar
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt

For garnishing (optional as needed)

  • Raspberries
  • Blackberries
  • Strawberries
  • Kiwi

Method:

Heat a medium-sized saucepan over medium heat. Bring oat milk to a boil. Slowly add cream cheese, brown sugar, and salt. Reduce to low-medium heat and continuing stirring while the pudding cooks. Add molasses and vanilla extract, stir, and cook for 5-8 minutes until there is a creamy consistency. Turn off heat and spoon into a serving bowl. Refrigerate uncovered for 4-5 hours. Serve with your favorite berries.
