Pomelo is associated with the citrus family. This popular fruit is rooted in Southeast Asia. It is similar to the larger grapefruit, available during winter, and incredibly nutritious. I enjoy the sweet refreshing taste specially when tossed with pearl couscous, pomegranate seeds, and my homemade salad dressing.
I prepare it regularly as it is easy to put together within a few minutes. This delectable salad lights up my day with every bite – particularly during the lunch hours when I tend to be more focused and am able to get more tasks completed.
Ingredients:
- 1 cup boiled pearl couscous
- 1 pomelo, medium size, peel and remove white pith, cut into pieces
- 1 cup pomegranate seeds
- 1 cup coriander, finely chopped
- 1 cup cucumber, diced
- Lime wedges
For preparing salad dressing:
- 1 tablespoon sweet and chilies sauce
- 1 tablespoon honey
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 3-4 cloves garlic, crushed
- 1 teaspoon chili flakes
- 2-3 green chili, small size, finely chopped
- 1 tablespoon fish sauce
- 1 tablespoon grape seed oil
- Sea salt as needed
Method:
For preparing salad dressing:
In a large bowl, add lemon juice, honey, sweet chili sauce, garlic, chili flakes, lemon zest, fish sauce, green chili, grape-seed oil, and sea salt. Whisk together to make a smooth sauce. Set aside.
Assembling the salad:
In a serving large platter, put pomelo, pearl couscous, cucumber, cilantro, pomegranate seeds, and the prepared salad dressing. Mix well until it all comes together. Serve couscous with lime wedges and cilantro.
