Citrus Cake with Turmeric

It is an artistic endeavor to create my citrus cake recipe over the winter when we all crave comfort snacks. While having this delicious cake with hot tea, I got a blast of citrus in every bite. The best thing about the cake is that it is incredibly flavorful and pleases everyone in my family because of its super-moist texture. This cake is simple to put together without putting in lots of effort.

Ingredients:

  • 1 blood orange, thinly sliced
  • 1 navel orange, thinly sliced
  • 1 ½ cups all-purpose flour
  • 1 whole stick of butter, 120 gm
  • 1/3 cup sour cream (alternatively Greek yogurt or labneh)
  • ½ cup butter milk
  • 1 cup sugar, plus two tablespoons for sprinkling
  • 2 eggs
  • 2 teaspoons baking powder
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons grated lemon zest
  • ½ teaspoon turmeric powder
  • 1 teaspoon sea salt

Method:

Heat the oven to 400 degrees Fahrenheit. Grease a loaf pan with non-stick spray. In a large bowl add butter, sour cream, butter milk, orange juice, sugar, and eggs. Whisk well together until the mixture is smooth.

Now whisk flour, baking powder, turmeric, lemon zest, and salt in a separate bowl by using a rubber spatula.

Combine the two mixtures and stir well by using a silicone spatula (or wooden spoon). Then scatter the orange slices on top with 2 tablespoons of sugar. Bake for 50- 60 minutes until orange slices are getting dark. Insert a toothpick into the center to make sure that the toothpick comes out clean. Let the cake cool for 10 minutes before serving.
