make a sourdough bread sandwich, you will need some common ingredients like chickpeas, spices, and herbs. This is not at all difficult to put together. In my recipe, I toss the chickpeas with tangy peanut sauce and crispy golden-fried spinach leaves.
Ingredients:
6-8 sourdough bread, cut into half slices (or any other bread)
1 (15-ounce) can, 1 ½ cups, cooked chickpeas
2 teaspoons ‘chaat masala’
1 tablespoon peanut sauce
1 tablespoon lime juice
Salt (according to the taste)
Preparing peanut sauce:
½ cup peanut butter, unsweetened
2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon sugar
2 tablespoons lime juice
3-4 cloves garlic, crushed
1 tablespoon roasted combination of spice powder (1 teaspoon of cumin seeds, 1 teaspoon raw coriander, and 2 teaspoons crushed red chili flakes; combine and roast on a low flame, and then grind into a powdered form)
Salt according to taste
Preparing deep-fried spinach:
2 bunches of fresh spinach, wash and dry completely, cut into bite size
3 cups cooking oil
Garnish (optional):
6-8 cherry tomatoes, cut into half slices
1 red onion, medium size, finely chopped
2-3 green chili or jalapeno, thinly sliced
Method:
In a large bowl, add ‘chaat masala’, lime juice, peanut sauce, and salt. Combine boiled chickpeas and mix together. Set aside.
Preparing deep-fried spinach:
Heat the oil in a wok over high heat. When the oil is simmering, gently transfer the batches of spinach, one at a time, in hot oil using metal tongs. Deep-fry the spinach for about 2-3 minutes until it turns crispy and light golden. Drain spinach on paper towels, and repeat the same steps with the remaining batches. Set aside.
Tip: To test if the oil is ready, dip a pinch of flour into it. If the oil is simmering it is ready to fry the spinach. Fry in small batches to cook evenly.
Preparing peanut sauce:
In a mixing bowl, whisk together the peanut butter, rice vinegar, soy-sauce, sugar, lime juice, garlic, roasted combination spice powder, and salt, until all the ingredients are in the form of a smooth sauce.
Assembling on sourdough bread:
On a serving plate, spread chickpeas gently on the bread slices. Drizzle peanut sauce on top of chickpeas. Serve with fried spinach, cherry tomatoes, onion, and jalapeno.
