Savoring a salad as a main dish during a busy weekday can be both delicious and healthy. With that frame of mind, I have prepared my brussels sprouts salad recipe. It is simple and I have used potatoes and Dijon mustard.
Ingredients:
2 pounds red potatoes
8 brussels sprouts
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1 lemon zest
3 cloves garlic
1 tablespoon honey
1 tablespoon extra-virgin olive oil
1 teaspoon black pepper
Sea salt according to taste
Method:
Boil potatoes and brussels sprouts with salt in a large saucepan for about 15- 20 minutes until they are tender. Drain the potatoes and set aside to cool completely.
Salad dressing:
Whisk together in a large bowl all the ingredients mentioned above to make the sauce. Set aside.
Assembling:
In the serving bowl, add the sprouts, cherry tomatoes, potatoes and prepared dressing, and mix thoroughly. Serve.
