Butterscotch Custard with Mixed Berries

The inspiration for my delicious custard recipe is the famous English butterscotch pudding. I make it without adding eggs, cornstarch, or gelatins. Instead, I use molasses as well as cream fraiche. I serve it with mixed berries.

Ingredients:

  • 1 cup heavy cream
  • 1 cup cream fraiche or sour cream
  • 2 tablespoons brown sugar
  • 1 tablespoon molasses
  • 2 teaspoons vanilla extract
  • ½ teaspoon sea salt

For garnishing (optional as needed)

  • Raspberries
  • Blackberries
  • Strawberries
  • Kiwi

Method:

Heat a medium-sized saucepan, then mix together heavy cream, sugar, crème fraiche, and salt over medium heat. Bring mixture to boil, reduce heat, stir rapidly, and let it simmer for a few minutes until the mixture’s consistency thickens. Then turn off the heat, and mix molasses and vanilla. Transfer the mixture into a serving bowl. Refrigerate uncovered for about 4-5 hours. Serve with your favorite berries.
