I find it convenient to prepare my crispy fish recipe with buttermilk. To maintain extra crispiness, I coat the fish with cornmeal and flour. This taste is irresistible with spicy Vietnamese sauce. Here is the recipe for everyone to savor.

Ingredients:
- 3 tilapia fillets, sliced into strips
- ½ cup buttermilk
- 1 teaspoon seafood seasoning
- Lemon zest
- 1 teaspoon paprika
- 2 teaspoons fish sauce
Fish coating:
- ½ cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon seafood seasoning
- 1 teaspoon sea salt
- Cooking oil for frying
Method:
In a large mixing bowl, add buttermilk, seafood seasoning, zest, paprika, and fish sauce. Mix together to form a smooth sauce. Combine fish fillets into the prepared sauce. Cover and refrigerate for 45 minutes to marinate.
In a bowl, mix together flour, cornmeal, seafood seasoning, and salt. Coat each fish fillet with a coating mixture.
Heat oil in a wok over high heat. When the oil is shimmering, carefully fry each coated fillet until golden and crispy. Serve with hot Vietnamese sauce.
