These days, we really need courage to step out for groceries. With this in mind, I’m sharing a simple salad recipe.
Ingredients:
- 1 cup green or yellow pea, (‘chana daal’)
- 1 cup sweet corns
- 1 red bell pepper, finely chopped
- 6-8 cherry tomatoes, sliced in half
- 5-6 green olives, thinly sliced (optional)
- 1 cup cilantro, chopped finely with stems
- 2 green chilies, small size, chopped finely
- Preparing Salad Dressing:
- 1 tablespoon sweet chili sauce
- 2-3 garlic cloves, crushed
- 1 tablespoon honey
- 1 teaspoon black pepper
- 1 tablespoon lime juice
- ½ teaspoon zest of half lemon (peeled and finely chopped)
- 1 tablespoon roasted combination of spice powder (1 teaspoon cumin seeds, 1 teaspoon raw coriander, and 2 teaspoons crushed red chili flakes; combine and roast on low flame, then grind into a powdered form)
- 1 tablespoon extra-virgin olive oil
- Salt according to the taste
Method:
Wash and soak green split peas in water for 1-2 hours. In a saucepan, add green split with two cups of water. Bring to a boil, then reduce the heat and cook until the peas get tender. Set aside.
For Preparing Salad Dressing:
In a large bowl, add the combination of spice powder, garlic, lime juice, zest, garlic, honey, sweet chili sauce, black pepper, extra virgin olive oil, and salt. Whisk together to make the salad dressing. Set aside.
Assembling the Salad:
In a large serving bowl add green peas, sweet corn, green olives, red bell pepper, cherry tomatoes, cilantro, green chilies, and the prepared salad dressing. Mix well allowing all the flavors to be infused. Adjust the seasoning and serve.
