Peach Bread with Thyme & Pine Nuts

Peaches are abundantly available during the summer. I love them both on their own and as an ingredient in my cooking. I have created a peach bread recipe. To enhance flavor, I have added pine nuts and thyme. I bake it and the result is amazing.

Ingredients:

  • 2 cups fresh peach puree
  • 2 cups all-purpose flour
  • 1 whole stick of butter, 120 gm
  • 1/3 cup sour cream
  • 1 cup of sugar
  • 2 eggs
  • 2 teaspoons vanillas extract
  • 1½ teaspoon baking soda
  • 1 tablespoon thyme
  • ½ cup pine nuts
  • 1 teaspoon salt

Method:

Heat the oven to 400 degrees Fahrenheit. Grease a loaf pan with non-stick spray. In a large bowl add melted butter, sour cream, sugar, eggs, and vanilla. Whisk very well together. Now whisk flour, baking soda, and salt in a separate bowl. Combine the flour mixture to the peach puree and thyme, and stir to combine by using a silicone spatula (or wooden spoon). Then carefully add and mix in pine nuts, and then pour the batter into it. Mix well, then transfer into the loaf pan and place it into the oven. Bake the bread for 50-60 minutes.  Insert a toothpick into the center. Make sure that the toothpick comes out clean. Let the bread cool for 10 minutes before serving.
