During the summer I make salads regularly, as they are simple, healthy, and taste awesome. Today I prepared a salad with boiled potatoes, dill, and dijon mustard. It can be considered as a side dish or accompanied with a main dish.
Ingredients:
- 2 pounds red potatoes
- 1 tablespoon Italian dressing (or vinegar with one teaspoon of oregano)
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- ½ cup extra-virgin olive oil
- ½ cup spring onions, finely chopped
- ½ cup cilantro, finely chopped
- ½ cup fresh dill, finely chopped
- 6-8 cherry tomatoes, cut half
- 1 teaspoon black pepper
- 1 tablespoon roasted combination of spice powder (1 teaspoon cumin seeds, 1 teaspoon raw coriander, and 2 teaspoons crushed red chili flakes; combine and roast on a low flame, then grind into a powdered form)
- Sea salt according to taste
Method:
Boil potatoes with salt in a large saucepan for about 20 minutes until they are tender. Drain the potatoes and set aside to cool completely.
Salad dressing:
Whisk together in a large bowl, mustard, Italian dressing, honey, roasted combination of spice powder, extra-virgin olive oil, black pepper, and sea salt.
Assembling:
In the serving bowl, add the potatoes and prepared dressing, and mix thoroughly. Sprinkle the potatoes with spring onion, cilantro, dill, and cherry tomatoes, and adjust the sea salt.
