I enjoy making frozen raspberry dessert for Iftar. It is associated with Italian cuisine. It is essentially a frothy sorbet, also known as spoon made with egg whites and raspberries. This is a healthy dessert.
Ingredients:
- 3 cups fresh raspberries (2 cups for cooking and 1 cup for garnish)
- 4 eggs white
- ¾ cup sugar (1/2 cup for cooking raspberry, ¼ egg whites)
- 2 bananas, sliced
Method:
Heat a saucepan over medium heat, add 1/2 cup sugar and raspberry. Cook for 2 minutes. While cooking, mash the raspberry with a wooden spoon. Then use a strainer and pour the mashed raspberries into it. Push to extract the juice from the mashed berries until there is 1 cup. Cool the juice and set aside.
Boil water in a large saucepan. Combine egg whites with ¼ cup sugar in a mixing bowl. Then place the bowl over a saucepan of boiling water. Beat them for about 1 minute until whites and sugar are well combined. Remove bowl from heat. Again beat egg whites for 2-3 minutes until they have a fluffy texture.
Tip: Electric beaters can be used
Now transfer the raspberry juice into the fluffy mixture and mix gently. Place in a serving bowl, cover, and freeze for at least 2 hours. Before serving, garnish with berries and banana.
