Father’s Day is a unique day to recognize the contribution, engagement, and time commitment of fathers in building a strong family unit. With this frame of mind, I have prepared the fruit punch for all the fathers out there – including my amazing father.
Ingredients:
- 1 cup fresh raspberries
- 1 cup fresh strawberries
- ½ cup fresh ginger, sliced
- 1 cup of sugar
For the cocktail:
- ½ cup strawberry syrup, cooled
- 1 cup pineapple juice
- 1 tablespoon lime juice
- 1 tablespoon pomegranate molasses
- Ice, for serving
- Fresh mint leaf, for serving
Method:
Heat a saucepan over medium heat, then add sugar, ginger, strawberries, raspberries, and 1 cup of water, and let it simmer over low heat. Cook for 15 minutes until it reduces. While cooking, mash the raspberries and strawberries with a wooden spoon. Then use a strainer and pour the mashed fruit mixture into it. Push to extract the juice from the mashed berries as much as possible. Cool the juice and set aside.
Tip: The juice can last in the refrigerator for a week
Preparing the cocktail:
Transfer the juice in the food processer, add pineapple juice, lime juice, pomegranate molasses, and 1 cup crushed ice. Blend the mixture thoroughly. Serve immediately with fresh mint.
