Shrimps with Spicy Red Pepper Relish

During the summertime, I enjoy making my shrimps with homemade spicy relish dish as it is a simple recipe, plus it’s a great use for leftover rice. My kids enjoy the recipe, so please do give it a try.

Ingredients:

  • 8-10 jumbo size shrimps, peeled and deveined
  • 1 teaspoon turmeric powder
  • 1 teaspoon caraway seeds
  • ½ cup fresh coriander, finely chopped
  • 1 cup fresh tomatoes, finely chopped
  • Salt according to taste
  • 2 tablespoons sesame oil, plus more for drizzling

Preparing the spicy relish:

  • 1 cup roasted red peppers, chopped
  • ½ cup red onions, chopped
  • 4-5 fresh cloves of garlic
  • 1- inch piece of fresh ginger, chopped
  • 4-5 fresh Thai red chili

Method:

In a food processor, add roasted red peppers, onion, garlic, ginger, and Thai red chili to make a smooth sauce.

Heat oil in a heavy skillet over medium heat. Add caraway seeds, turmeric powder, and two tablespoons of the spicy relish, and rapidly stir until it is fragrant. Combine tomatoes and salt, reduce heat, and cook until the oil separates. Add shrimps at high heat. Cook for about 2 minutes until they turn pink. Turn off the heat and garnish with coriander. Serve with boiled rice or bread.
