Spicy Stir-Fry Chicken with Sesame Sauce

One of the fun things about living in America is that I have been exposed to a lot of unique ingredients for my everyday cooking – specially when grocery shopping. This exposure to a wide variety of ingredients has expanded the repertoire of my original innovative recipes and enhanced my awareness of cooking techniques.

Today I have used sesame sauce as a key ingredient in my recipe. This sauce is prepared with deeply toasted sesame seeds. It has a dark brown color which is quite similar to peanut sauce. Sesame sauce is commonly used in Chinese cuisine for preparing noodles, stir-fried food, dips, and more. I like to use the sauce in my spicy stir-fry chicken recipe as it provides a slightly nutty flavor that enhances my dish significantly.

Ingredients:

Preparing the chicken:

  • 2 boneless chicken breasts, cut into thin slices
  • 2 tablespoons cornstarch
  • 1 tablespoon flour
  • 1 teaspoon baking powder
  • 1 teaspoon black pepper, crushed
  • 2 teaspoon soy sauce
  • 1 teaspoon Worcestershire
  • Cooking oil (for frying)
  • Salt according to taste

Preparing the gravy:

  • 2 cans (15 ounces per can) tomatoes sauce
  • 1 teaspoon sesame sauce
  • 2-3 cloves of garlic, crushed
  • 1 teaspoon black pepper, crushed
  • 1 teaspoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire
  • 2 tablespoons sweet and chili sauce
  • 1 tablespoon chili flakes
  • 1 tablespoon sugar
  • 2 tablespoons sesame oil
  • Salt according to taste

Preparing vegetable (optional):

  • 1 cup green, red, and yellow bell pepper, diced
  • 1 red onion, diced
  • 3-4 Thai red chili, cut into half
  • 1 tablespoon cooking oil

For serving:

  • 2-3 cups boiled rice
  • 2 teaspoons sesame seeds

Method: 

Preparing the chicken: 

  • In a bowl, mix together cornstarch, flour, baking powder, soy sauce, black pepper, Worcestershire ,and salt along with a tablespoon of water. Mix until the mixture gets smooth. Coat the chicken generously all over with the prepared marinade and keep for about 2 hours in the refrigerator.
  • Heat oil in a large skillet over medium heat. Add chicken pieces, reduce to low-medium heat, and fry until they turn golden brown (3-4 minutes per side). Set aside.

Preparing vegetable: 

  • Heat oil in a large pan over medium heat. Stir-fry the vegetables for 1-2 minutes. Set aside.

Preparing gravy: 

  • Heat a large saucepan and add oil over medium heat. Then cook the garlic till it gets fragrant. Add sesame sauce and chili flakes along with a tablespoon of water. Stir rapidly for 1 minute. Then add tomato sauce, sugar, and salt, then cook on low-medium heat for 2-3 minutes until bubbles appears.
  •  Add oyster sauce, soy sauce, Worcestershire, and sweet chili sauce, then stir rapidly until the gravy has a soup-like consistency. Then combine prepared chicken pieces and vegetables, and let it simmer for 1-2 minutes. Turn off the heat, then season with salt and pepper. Serve with boiled rice and sprinkle with sesame seeds.
