Summer Peach Salad with Tamarind and Roasted Spices

This salad that I prepare with fresh peach, lettuce, and avocado is amazingly nutritious and easy to prepare and is my favorite go-to summer salad. I drizzle it with homemade tamarind and roasted spices. During the summer, I strongly recommend giving it a try.

Ingredients:

  • 2 large peaches, sliced
  • 1 avocado, diced
  • 6-8 fresh yellow berries
  • 4-5 radish, cut into halves
  • 4-5 mozzarella cheese, sliced
  • 4-6 cherry tomatoes, cut into halves
  • 4-5 lettuce leaves, roughly cut
  • 1 tablespoon pine nuts

For the dressing:

  • 1 tablespoon tamarind pulp
  • 1 tablespoon honey
  • 1 tablespoon roasted combination of spice powder (2 teaspoons cumin seeds, 2 teaspoons raw coriander, and 2 teaspoons crushed red chili; combine and roast on low flame, then grind into a fine powder)
  • 2 tablespoons grape-seed oil
  • Sea salt as needed

Method:

In a serving plate, lay the lettuce leaves, radish, mozzarella, berries, cherry tomatoes, and pine nuts. Set aside.

Heat the grape oil on medium heat, and add tamarind and roasted combination of spice powder. Roast on low heat for about 1 minute, then add peaches and stir rapidly. Quickly add honey and mix well, allowing peaches to be glazed with the honey and sea salt, then turn off the heat.

Transfer the peach mixture into the prepared salad patter to serve.
