Watermelon Salad with Spices & Herbs

We often feel drained out during extremely hot summer days. To avoid this, I prepared my watermelon salad with herbs and spices. This salad is easy to put together, hydrating, and full of flavor, particularly when we tend to get tired and our body needs energy.Here is the recipe to enjoy.

Ingredients:

  • 4 cups watermelon cubed
  • 2 cups cucumber, sliced
  • 1/3 cup feta cheese crumbled
  • 1 tablespoon fresh mint

Preparing the dressing:

  • 1 teaspoon black pepper, crushed
  • 1 teaspoon mango powder
  • 1 teaspoon pomegranate molasses
  • 1/3 cup fresh orange juice
  • 1 tablespoon roasted combination of spice powder (1 teaspoon cumin seeds, 1 teaspoon raw coriander, and 2 teaspoons crushed red chili flakes; combine and roast on a low flame, then grind into a powdered form)
  • Sea salt according to taste

Method:

Preparing the salad dressing:

In a large bowl, add roasted combination of spice powder, black pepper, orange juice, pomegranate molasses, mango powder, and sea salt. Whisk together to make the salad dressing and set aside.

Assembling the salad:

In a large bowl, put watermelon, cucumber, feta cheese, mint, and the prepared salad dressing. Mix well, sprinkle mint leaves and serve.
